Integral plum cake

The ingredients 1 kilo of plums, 30 grams of rolled almonds, cinnamon powder and olive oil. For the dough 250 grams of whole wheat flour, 20 grams of fresh yeast, 125 ml. of milk, 1 egg, 30 grams of butter, 30 grams of brown sugar, the grated skin of a lemon and a pinch of salt. The preparation Start preparing the dough, heat the milk and dissolve the yeast in it, then put it in a large bowl to add the sugar, the egg and the pinch of salt. Beat all the ingredients and then add the sifted flour, lemon zest and the previously softened butter.

Work the dough until it becomes spongy and detaches itself from the bowl, if it does not happen, add a little milk and knead again. Sprinkle the dough with a little flour and wrap it in transparent film or in a damp cloth and store it in a warm place until its volume increases twice, half an hour.

Grease the cake mold with olive oil and sprinkle a little whole wheat flour, now arrange the dough in the mold evenly distributing it and let stand again about ten minutes.

Meanwhile, wash the plums and remove them, cut them into wedges and distribute them on the dough with the pulp facing up. Spread the sliced ​​almonds on the cake and you can already put it in the preheated oven at 180º C for half an hour.

Once you remove it from the oven, sprinkle some cinnamon that will give it a great flavor and you will be ready to serve.
