Precedents: sick and a day as if it were winter. Objective: eat something warm and rich. Result: a sweet potato and bacon minestrone recipe. Do not tell me how but I have managed to cover a recipe for Jamie Oliver and that it turned out very tasty.
The development of a minestrone like this basically consists of making a stir-fry with a background of vegetables and then adding the rest of the ingredients according to cooking time.
- 100 gr of bacon, 2 scallions, 2 carrots, 1 celery branch, a bunch of basil sprigs, 1 sweet potato, 1 small zucchini, a bunch of chard, 2 garlic, 200 gr of green beans, 400 gr of crushed natural tomato , 2 liters of bird broth, 60 gr of dry pasta and salt.
Preparation of sweet potato and bacon minestrone
First we prepare all the ingredients. It is the longest part in time and more laborious, then it only consists of adding everything in its moment. Finely chop the bottom of vegetables: chives, carrots, garlic and basil stalks. On the other hand we diced the peeled sweet potato, and the zucchini in quarters and then sliced. In addition we cut the leaves and stems of chard into pieces and cut the green beans.
In a casserole sauté the bacon cut into lardons or canes, add the bottom of vegetables and sauté all together for about 10 minutes until it is tender. Then we add the tomato, the bird or water broth and the beautiful ones. Let cook about 10 minutes. And add the zucchini, the green beans and the chard along with the pasta and cook about 10 more minutes. Season and serve.

As you can see in the main photo I have served the sweet potato and bacon minestrone with Parmesan so that at the time you eat it, grate it on top. It is a great touch, and if you are going to do it this way, do not add a lot of salt in cooking, since Parmesan is already a cheese with a saline point.
