  • Peeled carrot 125 g
  • Ground Almond 80 g
  • 1 teaspoon ground cinnamon
  • 1 teaspoon chemical yeast
  • Egg 1
  • Egg white 1
  • Agave syrup 20 g
  • Essence of vanilla 1/2 teaspoon (optional)

Grate the peeled and clean carrot with a fine grater. We put it in a bowl along with oat flakes, ground almonds, ground cinnamon and chemical yeast. We mix well. Add the egg, agave syrup and vanilla essence. Mix again until homogenized.

Then we beat the egg white to stiff snow. We incorporate it to the previous mixture little by little and stirring with enveloping movements. We take portions of the dough and place them on a baking sheet lined with vegetable paper, crushing slightly. Bake in the oven at 200ºC, with heat up and down, for 15 minutes. Let cool on a rack before consuming.
